Bubur Sumsum 

Happy Mother’s Day to Mommiesss 😆

Palm Sugar Sauce:

200 gr dark palm sugar, roughly chooped

100 water

1 pandan leaves, knotted

In saucepan, boil the palm sugar and water until it becomes syrup and thickened.

Set aside.

  

Bubur:

1 cup rice flour
600 ml coconut milk

1/2 tsp salt

2 pandan leaves, knotted

In saucepan on medium-low heat, mix flour and salt.

Gradually add coconut milk, continuously stir and make sure no lumps.

Add pandan leave.

Stir until it thickened.

Set aside, let it cool.
Serve with brown palm sugar.

Spicy Savoury Mince Pie

Originally savoury mince pie recipe from taste.com.au, I added my homemade chilli sauce and chilli powder to get “the heat” so called it spicy-savoury mince pie!

The stars of this dish are mince meat, tomato, chilli, sweet potato, and cheese..so make sure you got them 😃

Mince meat:

3 tbsp oil

2 onions, finely chopped

500 gr mince meat

1 can italian whole-peeled tomato 

1 tomato, quartered

200 gr tomato pasta sauce

1/2 cup water

1 tsp chilli powder

2 tsp my homemade chilli sauce

Stock powder, salt n pepper

1 cup peas 

Cook the onions till  fragrant.

Add mince meat, cook until browned.

Add the rest of ingredients, except peas.

Simmer until the water reduced.

Add peas, cook for 2 minutes.

Set aside.

Mashed sweet potato:

1 large sweet potato, microwaved and smashed

1/2 cup milk

1 handfull grated cheese

In saucepan mixed mashed sweet potato with milk on medium-low heat.

When liquid reduced, add grated cheese.

Keep stir it until cheese melted.

Finishing:

Preheat oven 180°C.

Put the mince mixture in ovenproof dish.

Add mashed sweet potato mixture on top.

Sprinkle with cheese.

Bake until cheese melted.

Grilled it to get that brown-looking cheesy pie. 

Serve with steamed veggie! Happy dinner! Happy tummy! 😆😆😆


Classic Beef Stroganoff

Here is my autumn brunch recipe….

Beef:

1 kg beef, thinly sliced

1/2 cup flour 

Salt and pepper

2 tbsp oil to stir fry

Mix beef flour salt and pepper, until beef lightly cover with flour.

Cook the beef in the pan until is browned.

Set aside.

Stroganoff Sauce:

2 onions, thinly sliced

2 garlics, roughly chopped

2 button mushroom, sliced

2 tbsp Worcestershire Sauce

2 tbsp stock powder or to taste

2 cups water

4 tbsp sour cream

Salt and pepper

2 tbsp oil

Cook the onion and garlic until fragrant

Add the fried-beef, mushroom, Worcestershire sauce, stock powder. 

Cook for 3 minutes.

Add water, sour cream, salt and pepper.

Simmer for about 6 minutes.

Give it a taste to correct the flavor if necessary.

Served it with pasta or rice and steamed veggies.


Double Chocolate Banana Bread 

Recipe from @colessupermarkets magazine.

BANANABREAD

Bowl I (mix it):

1 cup brown sugar

1 3/4 cups self-raising flour 

1/4 cocoa powder

1/2 cup choc chips

Bowl II (mix it):

1/2 cup milk

150 g melted butter

2 eggs

2 mashed RIPE bananas
Preheat oven 180°C 

Add ingredients in bowl II to bowl I, stir to combine.

Pour the mixture into loaf pan (10cmx22cm).

Bake for about 50-60 minutes..

Cool in the pan for 5 minutes, then turn onto a wire rack to cool completely.

COOKIES & CREAM FROSTING

125 gr softened butter (NOT MELTED)

1 1\2 cups icing sugar

1 tbs milk

80 gr melted white chocolate

Oreo, crushed
Beat the butter using electric mixer until very pale.

Gradually add icing sugar.

Beat in 1 tbsp milk, then add melted white chocolate.

Beat to combine.
Spread the frosting on top of cooled Banana Bread and sprinkle with Oreo

Ready to serve! 🏁🏁 

**Storing & Freezing Tips**

😎Store: place in ab airtight container at room temperature for up to 3 DAYS.

😇Freeze: Wrap individuals sli e in plastic wrap for up to 3 MONTHS

🤗Thaw: Remove banana bread from freezer and leave defrost on kitchen table. OR gently heat OR toast… serve with butter.

Lemon Butter Chicken with Hollandaise Sauce

CHICKEN:

500 gr chicken breast

1 tbsp italian mixed herbs

5 tbsp lemon juice

taste salt, pepper & garlic powder

5 tbsp butter, for frying

 

 

Cut chicken breast, mix all marination ingredients and marinate for 2 hours.

Cook the chicken with butter on medium heat.

HOLLANDAISE SAUCE:

4 egg yolks

3 tbsp lemon juice

2 tablespoons butter, melted

salt & pepper

Steam 4 eggs and melted butter. Stir constantly, to prevent “texture-breaking” (Don’t really know how to describe it, sorry hehe).

Add lemon juice and salt.

Give a taste, correct the flavor while continue stirring it about 15 minutes until sauce thickened.

 

Easy Vanilla Slice

5 tbsp custard powder

250 ml of lmilk

6-10 square crackers

Sherreded dry coconut

Icing sugar

 

Custard: mix custard powder and milk in a saucepan with low heat, stir continuously about 10 minutes until custard thickened, let it COOL.

Icing: mix icing sugar with liquid milk (about 5 tablespoons)

Arrange crackers in a dish, add the custard, lay the rest of crackers on top. Then pour icing sugar and sprinkle with shredded drycoconut. Let cool in the fridge, wait for 2 hours to serve.

Potato Salad with Yoghurt

5 potatoes, squared boiled with salt

cabbage, soak in hot water, drained

1 carrot, juliette, soaked in lemon juice

4 slices bacon / ham, chopped into small pieces, fried till crisp

4 boiled eggs, sliced

Salad sauce, mixed together:

7 tablespoons yoghurt (plain)

3 tbsp mayonaise

1 tsp mustard

Salt and pepper

 

Mix all ingredients and give a taste to correct the flavors, store in the fridge.

Cireng Nasi Crispy

Cireng is one of my favorite Indonesian snack. It basically fried-seasoned-tapioca. Not that healthy, but its yummy…… So I was looking around for Cireng recipe and found this Cireng Nasi Crispy (nasi means rice), never heard of it, something new but as long as its Cireng, its worth to try!

250 grams of rice, roughly grounded

6 tbsp tapioca flour

100 ml of hot water

1 teaspoon chicken stock powder

2 spring onion, sliced

Oil, to deep fry

Ground spices:

4 cloves garlic

1/2 tsp corriander seeds

1 small red chili (or as desire or don’t use it if you dislike spicy)

Salt, to taste

 

Mix all ingredients (except hot water and cooking oil) after mixed well.

Slowly add hot water while stirring until combined.

Don’t forget to correct the flavor.

Make round shape, or any shape you like.

Deep fry until crissssssspy;)

Super Moist Banana Apple Cake

Again inspired from the recipe of Tintin Rayner the cake is really moist. Usually I make banana cake with random recipe from Google, but this recipe is the best so far, and you should try it !

 

2 bananas, mashed

2 apples, squared, soaked with orange/lemon juice

1 orange/lemon to soak the apple

100 gr raisins

Container I (“Powder” Ingredients): mixed them together

180 gr self-raising flour, sifted

1 tsp cinnamon powder

30 grams of palm sugar

1/2 teaspoon baking soda

120 grams of sugar

Container II (“Liquid” Ingredients): mixed them together

3 eggs, beaten

120 gr butter, melted

 

 

Preheat oven at 180 degree Celsius.

Make a hole in the middle of the Container I, then add the ingredients from Container II, raisins, bananas and apples with orange juice

Mix them, and stir well but not too long.

Bake it, after 10 minutes, sprinkle raisins and apples (optional)

Then put it back in the oven for another 30 minutes or so.

Spicy Fried-Indomie a la Me

First time I went to supermarket, I was surprised that I found Indomie at coles and woolies ??? I thought they only sell it in Asian supermarket.. So here is my signature Indomie recipe. (P.S Indomie is the brand name)

 

2 packets Indomie (it comes with the seasoning in the package)

1 bunch of bok choy

2 mushrooms

3 slice bacon / ham, squared

2 eggs

2 teaspoon chilli sauce/ sambal

Black pepper

Acar

 

Crushed the noodle

Boil Indomie in hot boiling water,

Fry bacon until crisp.

Add the egg, scrambled, followed by adding Indomie & seasoning, bok choy, chilli sauce, blackpepper and mushrooms.

Cook about 1-2 minutes, serve with Acar (please refer to my Acar recipe)
